Made these delicious taco bowls for dinner because you should NEVER limit yourself to the amount of food that you can fit inside a tortilla! The mango salsa is a game changer!!
Ingredients:
• Spicy marinated grilled chicken (bought at Costco pre-marinated)
• @organicgirl romaine lettuce
• Black beans
• Brown rice (optional)
• Lots of sautéed veggies (red & green bell pepper and onions)
• 1/2 an avocado
• @sietefoods almond flour tortilla
Mango Salsa
Mix together:
•1 diced mango
• 1/2 small red onion finely chopped
• 1 red bell pepper finely chopped
• 1 small jalapeño diced
• 1 avocado diced
• Fresh corn off the cob (no need to cook it, just wash it and cut off the kernels)
• 1 tablespoon coconut water
• 1 tablespoon olive oil
• Juice from 1/2 lime
• Salt, pepper and garlic powder to taste
• Top with fresh cilantro!
Feel free to use shrimp, fish, steak or go vegetarian with this bowl! I made it with blackened cod as well and it was BOMB! But not as pretty as this one 😉
