Turkey meatballs and zoodles for dinner after a long weekend is just what I needed! If you haven’t tried zoodles, you need to get on it! I make my own and use a spiralizer I bought from Bed Bath and Beyond for $20 (click here to order online), but I’ve been seeing pre-made zoodles pop up everywhere. Super easy to make and they are great way to sneak lots of veggies into your meal!
• Sauté zucchini spirals in avocado or olive oil, salt and pepper. I always cook them apart from the sauce because they release a lot of water when cooked.
• Mix 1 lb lean ground turkey, one egg, half a white onion, 3 cloves garlic, 1/4 cup chopped fresh basil, salt & pepper, oregano and garlic powder and form into small meatballs
• Cook on medium to high heat with avocado or olive oil for about 20 minutes, flipping halfway through
• Add red sauce (or whatever sauce you like) to the meatballs and simmer for another 10 minutes on low heat (don’t forget to check the sugar content on canned sauces!)
Top with red chili flakes or some Parmesan cheese (no cheese for Whole30) if you want some more flavor. Comfort food without the calories!!!
