Not 100% sure what I just created, but I think it’s going to change lives… I think the best name for these would be Berry Cheesecake Bites. I want to put so many descriptive words in that title, but I’m holding back for the sake of keeping it simple. I will tell you all the descriptive words that belong to this legendary dessert – vegan, dairy free, gluten free, refined sugar free, fluffy, creamy, sweet yet tart, and just plain delicious. Don’t let the ingredients or nut soaking scare you, these are pretty dang easy to make.

Berry Cheesecake Bars
Ingredients
Crust
- 1 1/2 cups granola
- 2-3 tbsp coconut oil
"Cheesecake"
- 1 1/2 cups cashews soaked in warm water for 30 minutes+
- 2 dates soaked in hot water for 10 minutes
- juice & zest from one small lemon
- 1/4 cup unsweetened almond milk
- 1/4 cup coconut butter
- 1 tsp vanilla extract
- 1 cup fresh berries I used strawberries and raspberries

Pulse granola and coconut oil in a food processor or blender until a bread crumb like consistency is formed. Press a thin layer into a cupcake tin (you can even use a loaf pan to make bars) and freeze while you make the "cheesecake."
"Cheesecake"

Blend together cashews, dates, lemon juice and zest, almond milk, coconut butter, vanilla extract, strawberries and raspberries. Blend until smooth and fluffy! Spoon the mixture on top of the crust and freeze for at least one hour. Let thaw for 10 minutes before gobbling them up!
