
Zuchinni Boats & Pasta Salad
This dinner was exactly what I needed after lots of drinking and eating this weekend. Not even going to lie the salad was the star of the show, but these Italian zucchini boats came in a real close second! All ingredients are from Trader Joe's!
Ingredients
- 1/2 white onion Minced
- 3-4 cloves garlic minced
- 1 lb ground turkey
- 3 zuchinni
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp oregano
- 1/4 cup parmesan cheese
- 2 tbsp fresh basil
Salad
- 1 tsbp fresh basil
- 2 cups arugula
- 2 cups brown rice pasta
- 1 tomato Diced
- 1/2 cucumber Chopped
- 1/4 cup feta cheese
Dressing
- 2 tbsp red wine vinegar
- 1 tbsp olive oil
- 1/2 juice from one lemon
- lemon pepper
Instructions

Zucchini boats: Sauté 1/2 white onion and 3-4 cloves garlic for about 5 minutes in olive oil on medium heat. Add in about 1 lb ground turkey and turn the heat up to medium high. Season with salt, pepper, garlic powder and oregano. Once the turkey is almost cooked, add in your favorite red sauce (the organic tomato basil marinara from TJ’s is a great option!). Add the mixture to 3 halves zucchini’s with the middles hollowed out. Top with Parmesan cheese and fresh basil. Bake at 400 degrees for about 20 minutes.
