On the go breakfasts have been saving my life lately. Seem to always be running behind these days, but I’ll always make time for breakfast 🍳 Whipped these up on Monday night and I’ve been eating them all week long. I always try to avoid eating bars as a meal replacement so prepping breakfast is almost always included in my meal prep routine. These egg muffins are the perfect savory, protein-packed quickly breaky 😋
Scramble 8-10 eggs in a large bowl. Add in your favorite veggies - spinach or kale (wilted beforehand), onion, bell pepper, mushrooms or basically anything! Season with garlic powder, salt and pepper. Spray a muffin tin with oil and pour in your mixture. Bake at 350 for about 20 minutes. About halfway through I took them out and sprinkled some feta cheese on top. Refrigerate or freeze and pop in the oven or microwave to heat up. Serve with avo and @traderjoes everything but the bagel seasoning.
