In case you missed this INSANELY DELICIOUS meal I posted on my stories last night (saved in my highlights) I’m posting it on my feed too because it’s just too good to miss. Honey garlic shrimp with coconut rice and roasted broccoli- It’s my ideal dinner and it’s honestly the easiest recipe! Makes enough for 4-5 servings.
Coconut rice is 1 1/2 cups jasmine rice, 1 can full fat coconut milk, 1 empty can of coconut milk filled with water, and a dash of salt. Mix together, bring to a boil, then let simmer until water is absorbed (30ish minutes). Shrimp (1 pound) is cooked in a little sesame oil on medium high heat then once its cooked add in the sauce: 3 tbsp soy sauce, 1 tbsp honey, 2 tsp sriracha and 3 minced garlic cloves. Serve on top of rice with broccoli and roasted sesame seeds.
