Elote Corn Salad
Ingredients
- 4 cobs of corn about 3 cups of corn
- 2 limes juiced
- 1/4 red onion minced
- 1/2 jalapeno minced
- 1/4 cup green onion chopped
- 1/3 cup cilantro chopped
- 1/4 cup Greek yogurt
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cumin
- 1/4 tsp smoked paprika
- 1/4 cup cotjia cheese feta works too!
Instructions

Cut the corn kernels off the cob into a medium bowl. I add them right in raw, but feel free to grill the corn before hand or sauté the kernels to get a char.

Add in remaining ingredients and stir to combine. Season to taste.
