Changing the way you look at oatmeal forever. This PB&J oatmeal bake is saving my life this week – anyone else feeling extra snoozy?? Anywho, I adapted this recipe from @rachlmansfield and let me tell you, it’s life changing! TRY IT!

PB&J Oatmeal Bake
Ingredients
Oatmeal Bake
- 1 cup rolled oats
- 1/4 cup chopped nuts (almonds, walnuts, cashews)
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3.4 cup almond milk
- 1 egg
- 2 tbsp peanut butter
- 3 tbsp maple syrup
- 1 tsp vanilla
- 1 tsp liquid coconut oil (plus more for coating tin)
Toppings
- 2 tbsp jam
- 2 tbsp peanut butter
- fresh berries

Preheat oven to 350 degrees. Combine rolled oats, chopped nuts, cinnamon, baking powder and salt in a medium bowl. In another small bowl, combine almond milk, egg, peanut butter, maple syrup, vanilla, and coconut oil. Coat a baking tin with coconut oil - I used a small loaf tin, but if you use something bigger double the recipe! First put the dry ingredients in then pour the wet ingredients over top. Bake for 8 minutes then spread the top with peanut butter and jelly and bake for another 15-20 minutes until cooked through (longer if you double the recipe). Serve with @eatnuttzo chocolate power fuel or more peanut butter and some fresh berries!
