One pan, 30 minutes, 6 meals. This @traderjoes recipe is so simple and has so much flavor! Takes almost no time at all and leaves you with meals for the week. Who said cooking was hard?!
Sheet Pan Bruschetta Chicken
- 2 chicken breasts (cut lengthwise in half)
- 1-2 lbs mixed baby potatoes
- 1 container bruschetta
- 1 lb asparagus
- 1 lemon
- 1 tbsp olive oil or ghee
- 2 tsp salt, pepper, garlic powder, lemon pepper oregano
Preheat oven to 400 degrees and get out a large sheet pan.
Microwave potatoes in a microwaveable bowl for about 5 minutes to soften up. This way they cook faster in the oven!
Cut potatoes into 1-2 inch cubes and place on one half of the baking sheet. Lightly coat with melted ghee or oil and season with salt and pepper.
Cut two large organic chicken breasts in half long ways so it makes 4 thinly sliced breasts. Place on the other end of the baking sheet and season with salt, lemon pepper, garlic powder and oregano.
Top with thinly sliced lemon and @traderjoes bruschetta (in the refrigerated section).
Bake for about 30 minutes, adding in asparagus for the last 5 minutes (light drizzle of olive oil, salt, pepper and some more lemon on top).
