Freshhhh af for dinner tonight and it was magical! This blackened tilapia with cucumber avocado salsa is the perfect light dinner. The urge to stuff everything on this plate into a flour tortilla was REAL… maybe next time.
Blackened Tilapia with Cucumber Avocado Salsa
For the salsa, cut one large cucumber into cubes. I removed the seeds and some of the skin from it as well. Place in a large bowl and add some cilantro, green onion, 1/2 small minced white onion, 1/2 jalapeño minced and de-seeded, juice from one lime, salt and pepper. Lastly, add one avocado cut into cubes. Place in the fridge while the fish cooks. I used a blackened seasoning to coat the fish and cooked it in my cast iron skillet with @chosenfoods avocado oil for about 3-4 minutes each side. Serve with the salsa on top and brown rice, black beans and sweet potato rounds on the side 😋
