Extra creamy & cheesy plz! Well not exactly cheesy because this warm bowl of goodness is VEGAN! This dish is living proof that you don’t need to ditch your favorite comfort food to be healthy. You eat that big bowl of pasta and you go for seconds!
Butternut Squash Mac and "Cheese"
Blend 1 lb of roasted butter nut squash (bake at 400 degrees for 40-50 minutes with olive oil, salt and pepper), 4 tablespoons nutritional yeast, 1 cup organic vegetable broth, 1/2 sautéed white onion, 2 cloves garlic, and salt & pepper. Add more vegetable broth until you get a nice think consistency
Add “cheese” sauce to your favorite pasta! I used gluten free quinoa pasta from @wholefoods
Add garlic powder, red chili flakes, fresh sage and additional salt & pepper to taste
**I’m not vegan nor do I believe that you should be vegan, but I do know that excessive amounts of dairy (aka the amount in a nice serving of Mac & cheese) can cause inflammation and digestive issues. So let’s stick to this alternative because I promise you won’t be missing the cheese in this!
