Oh, how I love veggie packed meals PACKED with flavor 💥 You absolutely must try this cilantro lime creamy cauli rice – it’s the best side dish I’ve created yet and a perfect mixture of veggies, healthy fats (hello flat tummy), and antioxidants. Super easy to make because you know I’m all about keeping it simple.

Cilantro Lime Cauliflower Rice
Ingredients
- 4 cups cauliflower rice
- 1 tbsp avocado oil
- 2 ripe avocados
- 2 tbsp cilantro minced
- 1 lime
- 1 tsp salt, pepper, garlic powder, chili powder, paprika and cumin
Instructions

Sauté cauliflower rice in avocado oil for about 5-10 minutes until al dente. Remove from heat.

Mash the avocados and stir in the minced cilantro, juice from the lime, and seasonings.

Add in your rice, combine and add in additional seasoning if needed.

I served it with @costco roti chicken and roasted broccoli, but you could honestly eat it with anything or dip some chips in thurrrrr
