Under 15 minute dinners are LIFE. Sometimes I want to devote my heart and soul into a recipe and sometimes I just want to whip something up that is healthy, makes me feel good and tastes amazing. Insert Veggie Fried Rice. One of my go to recipes and I love adding cauliflower rice to “bulk it up” while sneaking in more veggies. Makes a ton so it’s perfect for meal prep too 🙌🏼
Healthy Veggie Fried Rice
- 1 package Asian Stir Fry Veggies from Trader Joe's
- 1 cup cauliflower rice
- 3 eggs
- 2 cups brown rice
- 2 tbsp soy sauce
- 2-3 cloves garlic minced
- 1 tbsp sesame, avocado or olive oil
- 1 tsp salt and pepper
Add oil to a hot large pan.
Saute for about 6-7 minutes until veggies are soft then add in cauliflower rice.
Push the veggies to the side and scramble eggs on the side of the pan. Once they are cooked, stir into the rest of the mixture and add in cooked brown rice.
Season with soy sauce, salt, pepper and garlic powder to taste.
Option to add sriracha or sambal for spice!
Sub soy sauce for coconut aminos for Whole30.
