Forget every ball recipe I’ve ever posted, these lemon blueberry collagen bites are the 💣 I am obsessed with lemon blueberry anything and these are no exception. I cannot stop eating them…. I used the nut pulp from the almond milk I made the other day as the base for these instead of throwing it away but you can also use almond meal to substitute.
Lemon Blueberry Collagen Balls

Combine nut pulp from 1 cup of almonds (or almond meal), 1/4 cup shredded unsweetened coconut, 3 pitted dates soaked in warm water for 5 minutes, juice from 1 lemon + zest from half, 2 scoops @furtherfood collagen peptides (use code brocc for a discount!), 2 tablespoons almond butter, a small handful of chopped cashews and a splash of almond milk (add more if needed to get a dough consistency). Once fully combined, stir in frozen blueberries and roll into balls. Freeze for a few hours then enjoy!!
