The holidays are upon us!!! I can’t believe how fast this year flew by. Insanely busy getting ready for Christmas on top of helping my parents move. Needed something quick and easy for a festive dessert and these were perfect! I also made a giant batch for gifting. Just put in a small plastic bag and wrap with some pretty ribbon and a few rosemary sprigs.

Mint Chocolate Covered Pretzels

Melt about 1 cup of semi sweet chocolate chips with 1/2 tablespoon coconut oil. I microwave it in 30 second increments stirring in between on 50% power. Once melted, add 1/4 tsp peppermint extract. Repeat with white chocolate. Dip mini pretzels (I used @snyders_hanover gluten free from Vons) in melted chocolate (I did 4-5 at a time) and drizzle with white chocolate. Top with crushed peppermint candy. Repeat but use the white chocolate for dipping and regular chocolate for drizzling. Let the chocolate harden (you can refrigerate to speed up the process) and enjoy!
