Sweet Potato Breakfast Nachos
- 2 sweet potatoes cut into rounds
- 1 tbsp avocado oil
- 1 tsp salt, pepper, garlic powder
- 3 cups spinach
- 1 can fat free refried beans
- 1/2 cup Greek yogurt
- 1/4 red onion minced
- 2 avocados mashed
Coat the sweet potato rounds in the avocado oil and seasonings and bake at 400 degrees for about 15 minutes each side.
Top with a fried egg, sautéed spinach, fat free refried beans, Greek yogurt (tastes like sour cream), red onion, cilantro, and mashed avocado.
Omit Greek yogurt for Whole30.
