Sometimes you just need a giant plate of nachos. I swapped the tortilla chips for sweet potato “chips” and added some ingredients I had in the fridge to top em’. So easy and definitely hit the spot!!

Sweet Potato Nachos
Instructions

Slice 1 sweet potato as thinly as you can and put aside in a large bowl

Toss with oil (I used avocado), salt, pepper, and garlic powder

Bake at 425 for 10 minutes each side then broil for about 5 minutes or until brown and crispy

Top with a light sprinkle of pepper jack cheese and broil for another minute or until cheese has melted

Add tomatoes, cilantro, avocado, hot sauce, Greek yogurt, and black beans on top. Then eat the whole plate with ZERO guilt!!
