It’s FINALLY cold in San Diego which means crockpot season and chili! Made a vegetarian version of my favorite chili and swapped the turkey with quinoa 💯 Yes, there are 2 Fritos on top because #balance. My friend also brought over corn bread with herb butter AND honey butter. K. Had to throw that on top too.
Sweet Potato Quinoa Chili
• In a crockpot combine 3 cups peeled and chopped sweet potatoes, 1/2 a medium red onion diced, 1 diced red bell pepper, 4 diced garlic cloves, 2 15 oz cans of black beans (drained), 1 28 oz can fire roasted tomatoes, 3 cups vegetable broth, 2 tablespoons tomato paste, 1/2 cup uncooked quinoa, 1 tbsp chili powder, 2 tsp paprika, 2 tsp cumin, 1 tsp coriander, 1 tsp garlic powder, a dash of cayenne pepper and some salt and pepper
Cook on low for 8 hours or high for 4 hours. Add in more veggie broth if you want it less thick. I ended up adding in about another half cup
Topped with Greek yogurt, chives, jalapeños, raw diced red onion, cheddar cheese, and avocado
