Dairy free Mac and cheese?! Yes, it’s delicious and tastes like the real thing. I’m not dairy free or vegan, but if I can make the same damn thing without using a pound of cheese I’m doing it. Not mention this literally takes 15 minutes and is SO easy. Try it (everything from @traderjoes)
Vegan Mac and "Cheese"
Blend 3/4 cup soaked cashews (at least 12 hours), 1/4 heaping cup nutritional yeast, 1/2 cup almond milk, 1 tablespoon water, and spices- salt, pepper, garlic powder, paprika, and lemon pepper. It should be the consistency of nacho cheese. If it’s too thick, add more almond milk.
Cook whatever pasta you like according to the package (I used @traderjoes brown rice fusilli). Drain but don’t rinse!
Slowly Mix in the "cheese" until you Coat the pasta evenly (you might have some leftovers, the cheese should make enough for 4-6 servings). I threw in some spinach too because why not?
Top with lemon pepper and red chili flakes
