The most basic and perfect dessert of all desserts that have ever existed…. VEGAN PUMPKIN CHEESECAKE BITES 🎃 I’m not entirely sure how these taste exactly like cheesecake, but they do and they are vegan, gluten free, loaded with healthy fats and allllll that good stuff!
Vegan Pumpkin Cheesecake Bites
Blend 2 1/2 cups @purely_elizabeth original granola and 1/3 cup coconut oil. Press into a muffin tin coated with coconut oil
Blend 1 3/4 cup soaked cashews (3+ hours), 1/3 cup maple syrup (or more if you want them sweeter!), 1/3 cup coconut oil, 1/2 heaping cup of canned organic pumpkin, 1 tablespoon vanilla, juice of one lemon and 3/4 tablespoon cinnamon.
Pour over crust, sprinkle with some more cinnamon, then freeze for a few hours. Then try to eat just one. Bet you can't do it.....
