Do you ever just crave ranch dressing and decide what you’re going to eat based off that? Yeah, that happened tonight. And then the most beautiful creation came from it – ZUCCHINI CAULIFLOWER FRITTERS! This photo wasn’t exactly insta worthy in my opinion but you deserve to know this recipe no matter how non-photogenic fritters are amazing!
Zucchini Cauliflower Fritters
Grate 2 large zucchinis and place in a mesh bag and squeeze out excess water (I used my nut milk bag) OR place in a bowl and squeeze the excess water out with a paper towel until the zucchini is dry
Put the dry grated zucchini in a large bowl and add one egg, 1/2 cup cauliflower rice (or grated cauliflower), 3/4 cup @bobsredmill almond flour, 3 tablespoons Parmesan cheese, 1 tsp baking powder, salt & pepper and garlic powder. Mix em’ all together!
Make little patties and cook on medium to high heat with some avocado oil for 4-5 minutes each side or until crispy
Dunk them in @bolthousefarms Greek yogurt ranch and have zero regrets because its healthy AF
