Went vegetarian for dinner! The healthiest meal with so many flavors I’m seriously in heaven! If you’re craving Mediterranean flavors, this is the perfect light meal, because we can’t all eat gyros every day.

Healthy Greek Style "Tabbouleh"
Instructions

Sautee cauliflower rice (pre made from @traderjoes) with olive oil, pink salt, pepper, and oregano for about 10 minutes or until soft. Let cool.

Combine finely chopped red onion, bell pepper, cucumber, sugar snap peas, romaine lettuce, cherry tomatoes and parsley

Add cooked cauliflower rice and dress with lemon juice, olive oil and more spices to taste

Add chicken, fish, or roasted chickpeas for protein! Topped with a little feta cheese, hummus and tzatziki sauce
