It’s squash season y’all!🍂 I love roasted butternut squash SO much. It can be sweet or savory and it has such a beautiful texture! Really made this bowl super satisfying AND it’s vegan. I meal prepped a bunch of the squash, veggies and quinoa to eat for lunch and dinner throughout the week!
Vegan Butternut Squash Bowl
IN THE BOWL
Sautéed white onion, mushrooms, yellow squash and spinach in avocado oil
Roasted butternut squash is tossed in olive oil, salt & pepper, garlic and fresh sage then baked at 400 degrees for about 45 minutes (flip halfway through). I brought mine pre cut from @costco
All of those goodies are on top of some quinoa and topped with marinara sauce and nutritional yeast
