My latest obession as probably most of you know is Trader Joe’s cauliflower gnocchi. It has the same dense, doughy texture as potato gnocchi except it’s made out of cauliflower. You guys have to try it, but remember: DON’T FOLLOW THE INSTRUCTIONS ON THE BAG! They are wrong and they will turn your perfect little “pasta” pillows into mush. Stick with these instructions and you are golden baby!
Pesto Cauliflower Gnocchi
The perfect light sauce to go with these healthy cauliflower "gnocchi" from Trader Joe's. Skip the sausage and cheese for a vegan meal!
- 1 bag cauliflower gnocchi from Trader Joe's
- 2 tbsp ghee, butter or olive oil
- 1 tbsp water
- 1 small zucchini or yellow squash chopped
- 1 or 2 Italian chicken sausage thinly sliced
- 8 spears asparagus ends cut off
- 1 tbsp olive or avocado oil
- 3-4 tbsp pesto
- 2 tbsp Parmesan cheese
Sauté one bag cauliflower gnocchi from @traderjoes in a hefty scoop of ghee or olive oil and a tablespoon of water. Sauté until cooked through and slightly browned.
Sauté Italian chicken sausage, asparagus and squash in the oil over medium heat until sausage is browned and veggies are soft (about 10 minutes)
Toss everything together with pesto and Parmesan cheese. I love the vegan cashew pesto from Trader Joe's!
