Cashew butter cookie bars anyone? If you haven’t caught on yet, I can’t bake. I will cook savory all day long before I break out my measuring cups. These however, are different. They’re basically impossible to mess up and something about the richness of the not too sweet cookie with the giant chunks of chocolate is just too good to resist!
Cashew Butter Cookie Bars
- 1 cup cashew butter
- 1/2 cup almond flour
- 1 egg
- 2 tbsp maple syrup
- 2 tbsp honey
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 1/8 tsp sea salt
- 1/4 cup liquid coconut oil plus extra to coat pan
- 1 bar Hu Salty Dark Chocolate
Preheat oven to 350 degrees. Combine wet and dry ingredients seperately, then combine. Once the batter is fully mixed, add to an 8 x 8 nonstick pan. I sprayed mine with coconut oil before hand to prevent sticking.
Bake for 15 minutes or until fully cooked - careful not to overcook, they dry out easily!
I topped mine with some extra cashew butter and melted chocolate for an extra decadent dessert!
