Almond Butter Chocolate Chip Banana Bread. No grains, no refined sugar, no dairy, no gluten. Just plain damn good chocolaty banana goodness. I’ve never been one to experiment and nail a baking recipe right off the bat, but here we are! It’s a 12/10.
GF Chocolate Chip Banana Bread
- 2 1/2 overripe bananas
- 2 eggs
- 1/2 cup almond butter
- 1/4 cup cup almond sugar or maple syrup
- 1 tsp vanilla
- 1/2 cup almond milk unsweetened
- 2 cups Bob's Red Mill Paleo Flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 cup dark chocolate
- coconut oil spray
Preheat oven to 350 degrees and spray an 8 x 8 baking pan with coconut oil or line with parchment paper
Combine the wet and dry ingredients, combine, then stir in 1/2 cup dark chocolate, chopped into small pieces or use chocolate chips. I use Hu Kitchen Almond Butter Dark Chocolate
Bake for 35-45 minutes - until the center is cooked and a toothpick comes out clean
Add more maple syrup or coconut sugar if you like your banana bread sweeter. I am sensitive to sugar so I don't need much!
You can substitute the Paleo baking flour for almond flour or whole wheat flour.
