Peanut Butter Cup Banana Bread Muffins
- 3 over ripe bananas
- 1/2 cup creamy peanut butter
- 3 eggs
- 1 tbsp maple syrup or honey
- 1 tbsp coconut oil melted
- 1/2 tsp vanilla extract
- 1/3 cup plus 2 tbsp coconut flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 cup dark chocolate
- coconut oil spray
Preheat oven to 350 degrees
Combine bananas, peanut butter, eggs, maple syrup or honey, melted coconut oil, and vanilla extract
In a separate bowl, combine coconut flour, baking powder and cinnamon.
Add the wet and dry ingredients together, stir well and add to a muffin tin either greased with coconut oil or lined.
