The most PERFECT pumpkin loaf there ever was 😍 Forget any other recipe you’ve ever seen, this one is the best I guarantee it! Plus it’s gluten free, dairy free, and paleo so go ahead and eat a second slice. Trust me, you’ll want to. Recipe is from the dessert queen herself, @rachlmansfield 💕
Paleo Chocolate Chunk Pumpkin Bread
- 3/4 cup pumpkin puree
- 3 eggs
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 4 tbsp Further Food collagen peptides
- 1/2 tsp cinnamon
- 1 1/2 tsp pumpkin pie spice
- 1-2 cups dark chocolate
Preheat oven to 350 degrees.
Combine pumpkin purée, melted coconut oil (I have a giant tub from @thrivemkt - I have a discount code under “discounts” in my highlights on Instagram), maple syrup, vanilla extract, and eggs.
In a separate bowl combine almond flour (also from @thrivemkt - super cheap!), coconut flour, coconut sugar (also @thrivemkt), baking powder, collagen peptides (code “brocc” for a discount), cinnamon, and pumpkin pie spice.
Combine the two mixtures and then fold in your choice of dark chocolate - I love @hukitchen salty dark chocolate and again it’s from @thrivemkt and it’s the cheapest I’ve seen it on their site!
Bake in a loaf tin lined with parchment paper for 40 minutes.
Let it cool, slice and DEVOUR!
