It’s Sunday which means football is on which meeaansss SKINNY SPINACH ARTICHOKE DIP is in the making! Spinach artichoke dip is my actual weakness. I remember thinking it was healthy back in high school because it had spinach in it 😭 I wish that were true… but to be honest to make gooood spinach artichoke dip, you’re going to need some cheese and butter – no ifs, ands or buts. This modified version leaves out heavy cream and mayo and replaces it with Greek yogurt making it more filling (maybe you’ll stop after 7 chips, but maybe not) and wayyy less cals and fat. It’s more of an “in shape but will never have abs” spinach artichoke dip. MAKE IT!
Skinny Spinach Artichoke Dip
- 16 oz Greek yogurt
- 8 oz cream cheese
- 1 1/2 cups Parmesan cheese
- 2 tbsp butter
- 8 oz frozen spinach - thawed and drained
- 14 oz quartered archiokes (not marinated -just in water) drained and coarsely chopped
- 4 oz can diced jalapenos drained
- 2-3 cloves garlic minced
In a saucepan combine all ingredients.
Once it starts to bubble and all ingredients are fully combined, it’s ready to serve! Careful, it’s SUPER addicting!
