Simmered this Turkey Bolognese alllll afternoon and DAMN it did not disappoint 😍 Italian Food has easily turned into one of my favorite comfort foods and its so incredibly easy to “healthify” without missing flavor and heartiness. This sauce is so flavorful it’s so easy to sneak in tons of veggies and replace regular pasta with spaghetti squash! Don’t get it twisted though, fresh pasta will forever have my heart🍝
- 1 lb organic ground turkey
- 1 white onion chopped
- 2-3 cloves garlic minced
- 3 tbsp olive oil
- 1 carrot peeled and chopped
- 1 celery stalk thinly sliced
- 24 oz marinara sauce I recommend Rao's Homemade
- 1 tsp salt & pepper
- fresh basil, parsley, and oregano optional
Sauté onion & garlic in olive oil in a large pot for about 5 minutes on medium heat (I used my @lodgecastiron Dutch oven).
Add in the carrot and celery. Sauté for another few minutes then add organic ground turkey. Brown the outsides for about 2 minutes then add in marinara sauce.
Season with salt & pepper and place a bunch fresh oregano, basil and parsley on top (optional).
Cover, reduce heat to low and let simmer for 30 minutes to 3 hours. Remove herbs before serving!
Serve over spaghetti squash (check my highlights for step by step on how to make) and sautéd veggies - I did cauliflower, zucchini and kale. Top with your choice of fresh basil, red chili flakes and/or Parmesan cheese!
