This Whole30 Creamy Butternut Squash Soup is literally fall inside a bowl 🍂 It tastes like a creamy delicious hug for your tummy and it’s SO easy to make!! You all need to try it ASAP!!!
Whole30 Creamy Butternut Squash Soup
- 1 white onion
- 2 tbsp olive oil or ghee
- 3 cups peeled and chopped butternut squash
- 2 cups peeled and chopped sweet potatoes
- 1 peeled and chopped carrot
- 2 cups veggie broth
- 1/4 cup coconut milk
- fresh sage
- 1 tbsp chili powder
- 1 tsp cinnamon
- 1 tsp salt & pepper
Sauté diced medium white onion in a large pot on medium heat with olive oil or ghee or combo of both (vegan without the ghee).
Once the onion becomes translucent (5ish min) add in butternut squash, sweet potato, carrot, and seaonings. Sauté for a few more minutes then add in veggie broth and bring to a boil.
Turn heat to low, add in a bunch of fresh sage on top, turn heat on low and cover. Let simmer for 45 minutes or until veggies are soft.
Remove the sage leaves then pour everything into a blender or use an immersion blender and blend until smooth.
Stir in coconut milk to make it creamy and top with a drizzle of EVOO, some cayenne pepper, fresh sage and feta cheese (not Whole 30/optional).
