I used to avoid Broccoli Casserole like the plague, but now its my favorite!! I decided to “heathify” the classic recipe as best as I could and I would say it’s a define WINNER! This Broccoli Cheddar Casserole will be the center of attention this Thanksgiving – I mean come on, broccoli & cheddar are the ultimate power couple!!!
Broccoli Cheddar Casserole
- 4 cups lightly steamed broccoli chopped
- 1 cup Greek yogurt
- 1 can condensed cream of mushroom soup
- 1 egg
- 1 cup cheddar cheese
- 2 cups crushed crackers or French Fried onions
- 1 tsp salt & pepper
Preheat oven to 350 degrees.
Combine Greek yogurt, soup, egg and salt and pepper in a bowl.
Place chopped broccoli in a baking dish and stir in the above mixture until broccoli is evenly coated.
Top with French Fried Onions or crushed crackers (Simple Mills almond flour for GF or Ritz Crackers both work great).
Bake for 35-40 minutes, finishing on broil for 1-2 minutes to brown the cheese and crackers on top. Serve immediately.
