Maple Glazed Roasted Carrots
- 1 lb multi-color organic carrots
- 1 tbsp high quality olive oil
- 1 tbsp maple syrup
- 1 tsp salt and pepper
- 2 tbsp goat cheese crumbles
- 2 tbsp walnuts chopped
- rosemary for garnish
Preheat oven to 400 degrees.
Coat the carrots in the olive oil, maple syrup, and salt & pepper.
Bake for 35-45 minutes, depending on how soft or crunchy you want them.
Top with goat cheese, walnuts and rosemary.
The carrots shrink a lot in the oven, so buy a little more than what you think people will eat!
