I’m baaackkk!!! After nonstop eating and literally no veggies for 5 days I’m craving all of the greens I can get. My craving for Italian was not stopping me either. Whipped up these Spinach & Quinoa Turkey Meatballs and a crunchy slaw salad in less than 30 minutes and damn was it satisfying! You gotta make it – perfect for meal prepping too!
Spinach & Quinoa Turkey Meatballs
- 1-1 1/2 lbs ground turkey
- 1/2 cup wilted or frozen spinach
- 1 cup cooked and cooled quinoa
- 1/4 minced white onion
- 3 minced garlic cloves
- 1 egg
- 1 tsp salt, pepper, oregano, garlic powder
- 1 tsp soy sauce
- red chili flakes (optional)
- 1 tbsp avocado oil
- 1 cup pasta sauce
Combine all ingredients except the oil in a large bowl. Form into balls and cook on a skillet over medium heat for 10-15 minutes. Once fully cooked, add in your favorite pasta sauce to coat the meatballs (about 1 cup).
Crunchy Slaw Salad
I buy the slaw mix from @traderjoes or you can chop kale, cabbage and Brussels sprouts.
Add dried cranberries, pepitas, and @chevoolife goat cheese and toss in @chosenfoods lemon garlic dressing.
