Yesterday I baked 3 different dessert recipes before going to my girls white elephant Christmas party and I honestly can’t even begin to explain how thankful I was for my crockpot. I knew I needed to make lunches for the week but seriously didn’t have more than 15 minutes to spend on preparing it.
This Slow Cooker Turkey Chili probably took 10 minutes to prep and then I was done! Of course it’s healthy and lean but it also has all of the flavors and heartiness of traditional chili. This recipe is now an absolute staple in our household!
Slow Cooker Turkey Chili
- 1 lb ground turkey
- 2 28 oz cans of diced tomatoes
- 2 tbsp tomato paste
- 2 14 oz cans black beans drained and rinsed
- 1 8 oz can diced green chilies
- 1 bell pepper chopped
- 1 white onion diced
- 3 cloves garlic minced
- 1 lime
- 1 large sweet potato peeled and chopped
- 1 jalapeno or poblano pepper
- 2 tbsp chili powder
- 1 tbsp paprika
- 1 tbsp salt & pepper
- 2 tsp cumin
- 1/2 tsp cayenne pepper
- Greek yogurt
Heat avocado oil in a pan over medium heat. Add ground turkey and cook until it’s browned and just cooked through.
Add to your slow cooker with diced tomatoes, tomato paste, drained and rinsed black beans, green chiles, bell pepper, white onion, garlic, juice from the lime, sweet potato and diced jalapeño or poblano pepper.
Season with chili powder, paprika, salt and pepper, cumin and a dash of cayenne pepper.
Cook on low for 7-8 hours or high for 3-4. Serve with Greek yogurt/sour cream, avocado, cilantro or honestly nothing - its that good!
Omit beans and Greek yogurt for Whole30.
