Falafel Tacos

FALAFEL TACOS – yes, that’s right. Not a typo. You cannot knock these until you try them!!! Something about the combination of all of these flavors just WORK. I would have never thought that Greek food in a taco would taste so damn good. Are you a fan of the Falafel Taco? Let me know once you try it 😉

Falafel Tacos

Servings 6 tacos

Ingredients

  • 6 falafel frozen or mix from Trader Joe's
  • 6 corn tortillas
  • 1 cup shredded lettuce
  • 1 tomato diced
  • 1 small cucumber peeled and diced
  • feta cheese
  • tzatziki sauce
  • Chipotle Bitchin' Sauce or hummus
  • fresh parsley optional
  • hot sauce optional
  • avocado oil if you are using boxed Falafel Mix

Instructions

  1. If you are making the Falafel Mix from Trader Joe's, follow box instructions except DO NOT BAKE! I pan fried mine in about 3 tbsp of avocado oil on medium high heat for about 4 minutes each side. 

  2. Once the falafel is cooked, drain the excess oil from the pan and heat up the tortillas.

  3. Cut the falafel in half and place on each tortilla with all toppings.
