It’s SALAD SZN 🥗 Kidding, but actually not really. If you are anything like me and consumed probably over 10,000 calories on Christmas yesterday, you miiiight be craving a salad right about now. This Superfood Waldorf Salad was exactly what I wanted for my bday dinner (with a side of tri-tip, mac and cheese and lots of wine 😜).
Superfood Waldorf Salad
- 6-8 cups mixed baby greens
- 1/2 cup red seedless grapes halved
- 1 honeycrisp apple chopped
- 1/4 cup dried cranberries
- 1/4 cup goat cheese
- 1 avocado diced
- 1/4 cup walnuts
- 2 tbsp olive oil
- 2 tbsp balsamic or red wine vinegar
- 1 garlic clove minced
- 1 tsp Dijon mustard
- salt & pepper
Toast walnuts in the oven at 350 degrees for 7-8 minutes. Combine all ingredients.
Whisk together all ingredients in a small bowl.
Toss the salad with the dressing. Add your favorite protein for a complete meal or serve as a side!
