Who’s ready for lots of delicious @whole30 recipes this month?? While I’m not actually following the Whole30 program, I am making it a point to do at least one Whole30 compliant meal a day for the whole month of January. So far, so good! These Sloppy Joe Stuffed Sweet Potatoes could be my dinner for the next 4 weeks and I would NOT complain! They are a definite must make, even if you aren’t doing Whole30!!! Taking comfort food to a whole new level. Here’s the recipe – adapted from @thedefineddish.
Whole30 Sloppy Joe Stuffed Sweet Potatoes
- 4 medium sweet potatoes
- 1 lb ground turkey or beef
- 1 cup white onion minced
- 3 cloves garlic minced
- 1 cup bell pepper minced
- 1 tbsp avocado oil
- 2-3 tbsp tomato paste
- 2 tbsp yellow mustard
- 1/4 cup coconut aminos
- 1 tsp chili powder
- 1 tsp red chili flakes
- 1 tsp cumin
- 1 tsp salt and pepper
- guacamole, green onion, other toppings
Start by cooking your sweet potatoes! I cooked for in my @instantpotofficial by adding 1 cup of water and pressure cooking them for 25 minutes. You could also bake them at 400 degrees for 45-1 hour.
While those cook, start white onion, garlic and bell pepper in avocado oil over medium heat. After about 5 minutes, add in ground turkey or beef and break up with a wooden spoon until the meat is browned (takes about 7 minutes).
Add in tomato paste, yellow mustard, and seasonings. Once combined, add in coconut aminos and sauté until reduced.
Add the mixture to the sweet potatoes and top with guacamole and green onion (Greek yogurt would be so good if you aren’t doing Whole30!!).
