The fact that I can now make my Salsa Verde Chicken in 10 minutes is mind blowing 🤯 I’m still getting the hang of it, but I am very much into my @instantpotofficial. It’s basically a slowcooker time machine. These Whole30 power bowls made the perfect meal prep for this week and were SUPER filling and satisfying. Plus with the InstantPot, it takes about 30 minutes to make! And no this is shockingly not an ad for the InstantPot… Just a big fan LOL.
InstantPot Salsa Verde Chicken
- 2 chicken breasts
- 1 jar salsa verde
- 1 4 oz can green chilies
Place chicken breasts in your InstantPot and cover with salsa verde and green chilies. Turn valve to sealing and select Pressure Cook for 10 minutes. Once the cook time is over, turn the Instant Pot off and let the pressure release naturally for 10 minutes (NOT quick release). Remove the chicken, shred with 2 forks, and add back in.
Served with romaine lettuce, tomato, avocado, sweet potato (roasted at 400 degrees for 12-14 minutes each side), and @primalkitchenfoods thousand island or ranch dressing (Whole30 friendly!!!).
You can also cook the chicken in a slow cooker for 4 hours in high or 7-8 hours on low.
