Creamy dreamy cauliflower Alfredo sauce 🤤 There’s really nothing quite like a giant plate of pasta and when you can make a rich and creamy sauce without the heavy cream and cheese, you have an excuse to go back for seconds 😏 Here’s now to make it 👇🏼
Cauliflower Alfredo Sauce
- 5 cups steamed cauliflower florets
- 1 white onion
- 6 cloves garlic
- 2 tbsp ghee, butter or olive oil
- 1/2 cup milk almond or regular work!
- 1 cup vegetable broth
- 2 tbsp lemon juice
- 1 tsp salt, pepper, oregano, and red chili flakes
Start by sautéing the white onion in ghee, butter or olive oil over low/medium heat. It should get soft and caramelized after about 20 minutes. Add in the cloves of garlic (they can be whole - we are blending it later!) and sauté for another 5 minutes until fragrant.
Add to a blender with steamed cauliflower florets, milk, vegetable broth, lemon juice and salt, pepper, oregano and red chili flakes. Blend until smooth and add more liquid depending on how thick you want it.
Pour over your favorite pasta and season to taste. I ended up adding a lot of lemon pepper, more salt and topped with red chili flakes and a little Parmesan cheese!
