My love language is peanut butter❤️ If you couldn’t tell by now, I’m not a big dessert guy 🤷🏻♀️ I usually prefer savory over sweet but if you put a Gluten Free Half Dipped Peanut Butter Cookie in front of me (or anything peanut butter & chocolate) you better believe I’m eating it. These are super chewy and soft and the chocolate dip really makes them next level 🙌🏼 Shoutout to @beachsidekitchen for the inspo ❤️❤️
Gluten Free Half Dipped Peanut Butter Cookie
- 1 egg
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 tbsp coconut sugar
- 3/4 cup natural peanut butter
- 3/4 cup almond flour
- 1/4 tsp baking soda
- pinch of salt
- 1 chocolate bar
- 2 tsp coconut oil
- flaky sea salt for topping optional
Peheat oven to 325 degrees.
Combine 1 egg, maple syrup, vanilla, coconut sugar and natural peanut butter. In a separate bowl, combine almond flour, baking soda, and a pinch of salt. Combine the wet and dry ingredients and roll dough into small balls and place on a baking sheet.
Use a wet fork to press the cookies down and create the criss cross marks. Bake for about 13 minutes, let cool, dip in your fav chocolate (I used a @hukitchen dark chocolate bar melted with a little coconut oil), and sprinkle with sea salt flakes!
