I feel like salads get a bad rep, but a lot of the time they are the most flavorful meals I make! This BBQ Chicken Salad is everything you could ask for when you are in need of some serious greens, but don’t want to skimp on flavor. For me, a salad needs a little bit of everything: sweet, savory, creamy, salty, and definitely a crunch factor! @HarvestSnaps sent me a sneak peek of their new Southern Style BBQ flavor, and it was the perfect addition of wholesome crunch and a better-for-you alternative to tortilla chips. BBQ Chicken Salad
- 1 large chicken breast
- 1/2 cup BBQ sauce
- 3-4 cups romaine lettuce finely chopped
- 1/2 cup Harvest Snaps Southern Style BBQ Black Bean Snack Crisps
- 1/3 cup halved cherry tomatoes
- 1/2 cup black beans
- 1/2 avocado diced
- 1/3 cup provolone cheese chopped
- 1/4 cup ranch dressing
- salt & black pepper
Start by making your BBQ chicken. If it's a thick breast, cut it in half longways and season with salt and pepper. Cook on your cast iron skillet or grill for about 5-7 minutes each side. Remove from the heat and let it rest for 10 minutes then brush with BBQ sauce - I used @annieshomegrown.
For the salad, finely chop romaine lettuce and wash and dry completely! Add in cherry tomatoes, black beans, avocado, and *key* chopped provolone cheese. Lightly dress with ranch dressing and top with BBQ chicken, fresh cracked pepper and @HarvestSnaps #SouthernStyleBBQ Black Bean Snack Crisps!
