Say hello to your new BFF: Sheet Pan Pistachio Pesto Salmon 😍 Salmon is actually the EASIEST protein to cook (in my opinion) because you can just pop it in the oven and it comes out perfect every time, plus you don’t have to worry about undercooking it like you do with chicken. I actually prefer my salmon a little raw on the inside! This makes the perfect week night meal that is done in 15 minutes and just one pan to clean up 🙏🏼 If you’ve been following me for a while and haven’t made a recipe yet, this is it!
Sheet Pan Pistachio Pesto Salmon
- 2 wild salmon filets
- baby red potatoes
- veggie of your choice
- 2 tbsp avocado oil
- 1/2 lemon
- 1 tsp salt and pepper
- 2-3 tbsp de-shelled pistachios
- 1 cup basil
- 1/4 cup olive oil
- 2 cloves garlic
- 2 tbsp Parmesan cheese
- 1 tsp black pepper
Preheat your oven to 400 degrees.
Microwave your baby red potatoes for 5 minutes then add to the sheet pan and coat with @chosenfoods avocado oil, salt and pepper (you could also bake them prior to adding the fish and veggies for about 20 min).
Next add your salmon and coat with your Pistachio Pesto! Either blend 2-3 tbsp de-shelled pistachios to 1/2 cup pesto or to make your own by blending the above ingredients together.
Add your veggie- I did asparagus coated in @fourthandheart ghee, garlic, salt and pepper. Bake for 13-15 minutes then serve with fresh lemon! Lasts for 3 days in the fridge.
