So I had an idea to make cheesy broccoli like my mama used to make when we wouldn’t eat our veggies but obviously had to make it healthy and maybe even dairy free – aiming for the stars here. I was playing around with some ingredients and all of the sudden I had the most perfect Vegan Sweet Potato Nacho Cheese on my VERY FIRST TRY!!! I’m honestly so proud of myself 😂🙌🏼 You guys can literally put this shit on EVERYTHING. It’s super easy to make too (as always).
Vegan Sweet Potato Nacho Cheese
- 1/2 cup raw cashews soaked in warm water for 30 min
- 1/2 cup steamed sweet potato
- 1 cup almond milk
- 2 tbsp nutritional yeast
- 1/2 lemon (juice)
- 1 tsp paprika
- 1 tsp salt & pepper
Blend all ingredients together. Add more salt and pepper to taste!
