Playing around in the kitchen for dinner and created these Thai Coconut Meatballs with sauce that you will want to bathe in šš» They were shockingly easy and went so well with a heaping plate of stir fry veggies. The perfect quick weeknight dinner!

Thai Coconut Meatballs

Ingredients
Meatballs
- 1 lb grass fed organic ground beef
- 1 egg egg
- 1 tbsp cilantro leaves chopped
- 1 tbsp basil leaves chopped
- 1 tbsp green onion chopped
- 1 tsp soy sauce or tamari
Sauce
- 3/4 can coconut milk
- 1 tbsp peanut butter
- 1/2 tbsp red curry paste
- 1 tbsp soy sauce or tamari
- 1 tbsp cilantro leaves chopped
- 1 tbsp basil leaves chopped
- 1 tbsp green onion chopped
Instructions

Preheat your oven to 400 degrees.

In a large bowl combine beef (or any ground meat), egg, fresh cilantro, green onion, basil, and soy sauce. Combine, form into 1 inch balls, and bake for 8-9 minutes.

Combine all the ingredients for the sauce and let it simmer for about 5-7 minutes.

Serve with brown rice (cauliflower rice for Whole30) and stir fry veggies from Trader Joe's (I just sautƩ them in sesame oil and some soy sauce).
