Playing around in the kitchen for dinner and created these Thai Coconut Meatballs with sauce that you will want to bathe in 🛀🏻 They were shockingly easy and went so well with a heaping plate of stir fry veggies. The perfect quick weeknight dinner!

Thai Coconut Meatballs

Ingredients
Meatballs
- 1 lb grass fed organic ground beef
- 1 egg egg
- 1 tbsp cilantro leaves chopped
- 1 tbsp basil leaves chopped
- 1 tbsp green onion chopped
- 1 tsp soy sauce or tamari
Sauce
- 3/4 can coconut milk
- 1 tbsp peanut butter
- 1/2 tbsp red curry paste
- 1 tbsp soy sauce or tamari
- 1 tbsp cilantro leaves chopped
- 1 tbsp basil leaves chopped
- 1 tbsp green onion chopped
Instructions

Preheat your oven to 400 degrees.

In a large bowl combine beef (or any ground meat), egg, fresh cilantro, green onion, basil, and soy sauce. Combine, form into 1 inch balls, and bake for 8-9 minutes.

Combine all the ingredients for the sauce and let it simmer for about 5-7 minutes.

Serve with brown rice (cauliflower rice for Whole30) and stir fry veggies from Trader Joe's (I just sauté them in sesame oil and some soy sauce).
