I haven’t been in the kitchen in almost 2 weeks and DAMN it feels good to be back 🙌🏼 Unsure what inspired this but this Balsamic Chicken with Mushrooms & Spinach paired with the Caprese Salsa is 🤯 It may sound fancy AF but it’s super easy to make and very meal prep friendly! Balsamic Chicken with Mushrooms & Spinach and Caprese Salsa
- 2-3 large heirloom tomatoes
- 1/4 cup fresh mozzarella cut into small pieces
- 1/2 avocado cubed
- 1/4 cup basil chopped
- 1 tsp oilve oil
- 2 tbsp balsamic vinegar
- 1 tsp salt & pepper
- balsamic glaze to top
- 2 chicken breasts
- 1/2 cup balsamic vinegar
- 1 tsp salt, pepper, and Italian seasoning
- 1 tbsp olive or avocado oil
- 10 oz white mushrooms
- 2 cups spinach
In a large bowl combine all ingredients together. Top with balsamic glaze after serving.
Cut chicken breasts in half longways (to make them thinner) and marinate in 1/2 cup balsamic vinegar for about 10 minutes (or longer). Season with salt, pepper and Italian seasoning.
Cook in olive or avocado oil over medium heat for about 4-5 minutes each side or until it is cooked through. Remove the chicken from the pan and add in 10 oz of mushrooms and another splash of balsamic vinegar. Cook for about 5 minutes then add 2 cups of fresh spinach. Combine, remove from heat and serve on top of the chicken.
