Is it REALLY even Easter if you don’t eat Reese’s Eggs until you hate yourself? Answer is no. Of course I had to healthify the recipe (shout-out to @beachsidekitchen for the inspiration) and damn these are pretty spot on to the real thing. Basically just took my perfect bar recipe (tweaked a few things) and covered them in chocolate 🤷🏻♀️ Added in some collagen as well for extra protein – it’s honestly a decent breakfast food… 😂 Try them out!
Healthy "Reeses" Eggs
- 1 cup peanut butter
- 1/3 cup coconut flour (almond works too)
- 1/4 cup maple syrup (or honey)
- 1/2 tsp vanilla extract
- 2 scoops Further Food collagen optional
- 1 chocolate bar plus more for drizzling
- 1 tsp coconut oil
Combine peanut butter, coconut flour, maple syrup, vanilla and *optional* 2 scoops @furtherfood collagen peptides (code is brocc).
Form into “eggs” then place on parchment paper and refrigerate for 30 minutes. Coat in melted chocolate (combine chocolate bar and coconut oil) then put in the freezer for at least 30 more minutes.
Feel free to drizzle with more chocolate and let it freeze a little longer then enjoy!
