Whipped up a 10 minute totally non Instagram worthy dinner but I’m posting it anyway BECAUSE 1. It took 10 minutes to make 2. Blew my damn tastebuds out of the water and 3. I know you all have a nice green bottle of the jalapeño sauce from yesterday’s recipe and here’s how you can use it again! And if you needed another reason it’s a super easy meal to make for one! Here’s the recipe for my Blackened Chicken & Jalapeño Crunchy Kale Salad 💥💥💥
Blackened Chicken & Jalapeño Crunchy Kale Salad
- 1 chicken breast
- 1 tbsp avocado oil
- 1 tbsp blacken seasoning
- 2 cups Cruciferous Crunch Mix from Trader Joe's
- 1 tbsp Jalapeno Sauce from Trader Joe's
- 1 tbsp lemon juice
- slivered almonds
- feta cheese
First start to heat your cast iron pan over medium heat. Add avocado oil and add your chicken breast (any protein works here too) coated with blacked seasoning. Search “blackened salmon” on my blog for the seasoning recipe or you can buy it pre-made! Cook for about 5 minutes each side (if it’s thicker, it will take longer but I usually cut mine longways to make it thinner. Cooks faster and tastes better IMO).
The salad is the Cruciferous Crunch Mix dressed with the Jalapeño Sauce from TJ’s and some fresh lemon juice. I added some cucumbers, slivered almonds, feta and avocado.
