Best dinner I’ve made in a MINUTE 👏🏼 One of favorite apps is the asparagus fries at @nickslagunabeach and I had to remake for you guys. It was a little tricky getting the breadcrumbs to stick but even though they don’t look pretty, they taste 💯💯💯 I Ate like 7 while the chicken finished cooking 😂 Here’s the deets for everything on the plate!
Bombay Chicken and Asparagus Fries
- 1-2 eggs
- bread crumbs
- 1/2 cup Bombay Bitchin Sauce
- 1 lemon juice
- 3 cloves garlic minced
- 1 tbsp honey
- 1 tbsp avocado oil
Pesto Smashed Potatoes
- small red potatoes
- pesto sauce
Coat asparagus in egg wash then in flour - I used @bobsredmill gluten free baking flour. Then put it back in the egg wash and coat in breadcrumbs. I air fried them for about 10 minutes at 400 or you can bake for 15-20 at 400 degrees. Dip in ranch!
Chicken is marinated in Bombay @bitchinsauce, juice from one lemon, 3 cloves garlic and 1 tbsp honey. Cooked it on my cast iron for about 5 min each side.
Smashed potatoes were microwaved for 6 minutes or until soft. Then I smashed them with the bottom of a cup, lathered them in pesto and broiled until crispy.
