Who saw this 💣 dinner I posted on my story last night?? Before I get to the recipe for the Teriyaki Salmon and Vegan Kung Pao “Noodles,” lets give you a little BTS moment. I slept until 9 am because i tried to have a normal day yesterday but clearly I’m still sick af. Haven’t worked out in over a week and after eating ALL OF THE FOOD in NYC I feel even worse. Speaking of NYC, haven’t even start my guide *que panic setting in.* This food is also leftover from last night and I didn’t bother heating it up so you’re looking at freezing cold salmon and veggies right now (did i ruin it?). Spent 15 minutes looking for those stupid chopsticks that I never use except for photos. Stressed about how many likes this will get because Friday’s suck for engagement and I’m posting at a weird time. Shall I go on? 😂 I love sharing my food pics but if you for one second think “aw man she cooked another amazing meal and I got takeout I wish I had my life together like her,” just remember: you’re wrong. 👇🏼

Vegan Kung Pao “Noodles"
Ingredients
- 1 tbsp sesame oil
- 1/2 white onion cut into slices
- 1/4 cup green onion
- 2 crushed garlic cloves
- 1 tsp grated ginger
- 1 cup broccoli
- 1 cup shredded carrots
- 1 tsp sambal/chili sauce optional
- 2 tbsp crushed peanut plus more for topping
- 1-2 tbsp soy sauce
Instructions

Saute white onion, green onion, garlic cloves and grated ginger in sesame oil over medium heat.

After about 5 minutes, add broccoli, sliced carrots, soy sauce, a little chili sauce, and crushed peanuts and sauté for another 5ish minutes. I had some leftover teriyaki sauce that I threw in there as well!

Top with more crushed peanuts and serve!
